Coon Chicken, 1925-1957

Founded by Adelaide Burt and Maxon Lester Graham in 1925, the first outlet of Coon Chicken was established in Salt Lake City, Utah. The restaurant had only four locations that grew until the 50s as it did not get the chance to expand the name due to changing culture considerations. The chain had an African American porter on the trademark and entrance, which along with the word “coon,” spurred ethnic and cultural issues. Coon Chicken had to close their branches one by one; the last one at Highland Drive being closed by 1957.
